Steamed Dumplings with Beef and Green Onion

An onion is cut in half, then cut into slices and chopped

Just cut the shallots into small pieces as shown in the picture, don’t chop them too much.

Fresh beef tendon is first cut into meat slices, one by one

Cut the warp and weft of the meat, chop the warp once and stamp the weft again, repeat the above action and chop for more than ten minutes to form a meat filling.

The chopped minced meat is as shown in the picture, like minced meat.

First add a proper amount of water to unload the meat filling, and then add a proper amount of salt, cooking wine, lemon juice, soy sauce, thirteen spices, chicken essence and other seasonings and stir well, stir clockwise to give the meat filling strength.

Mix the dough with warm water and knead it several times to make the surface of the dough smooth. Cover with plastic wrap and let it stand for about 10 minutes.

Cut a piece of dough and roll it into a long strip, then use a dough knife to cut into small pieces, preferably about the same size, so that the dumplings are the same size and look better.

Sprinkle the agent with some flour, knead it round and flatten it for later use.

Sprinkle a little flour on the panel, and roll the dough with the agent in one hand and the rolling pin in the other. When rolling the dough, you should rotate the dough quickly, so that the rolled dough is relatively round.

Put an appropriate amount of minced meat on the dough and make dumplings using the method of making steamed dumplings.

Dip the dumplings in dry flour, put them in the steaming dish, boil water in the steamer, put the steamer on the pot and cover the pot after the water is boiled, steam for 15 minutes, turn off the heat and simmer for 2 minutes Open the lid and put it on the plate, you can share the food with your family!
Tips:
1. Fresh meat is not easy to cut, you can put it in the refrigerator and then cut it, it won't be soft.
2. The minced meat will taste better if you pour it with water first. The steamed minced meat will not be too dry. I personally like vegetarian so I use water instead of oil. You can also use oil and minced meat.
3. You can add different seasonings according to your own taste. I don't eat ginger so I didn't put ginger, and used cooking wine and lemon juice to remove the fishy taste.
4. My steamed dumplings are steamed dumplings, not steamed dumplings made with noodles.
5. After the dumplings are steamed, simmer for a while and then lift the lid. The dumplings are better to take out. They are not sticky.
