Steamed Eggs with Minced Meat and Tofu

Beat two eggs into a bowl, add a little salt, a few drops of peanut oil, two-thirds of the egg's warm water, and beat them.

Sieve the egg liquid to remove the foam, so that the surface of the steamed egg custard is smooth.

The pork is chopped into minced meat. It is okay to use minced meat directly.

Take out the lactone tofu box and cut into thick slices.

Find a soup bowl, put the tofu in it, sprinkle a little salt on the surface, and then spread the minced meat and sprinkle a little salt.

Pour in the sifted egg liquid.

Put enough water in the steamer to boil over high heat, put in tofu and egg custard, turn to medium high heat and steam for 12 to 3 minutes, turn off the heat and let it out for 2 minutes. When you first start steaming for two minutes, you can lift the lid once to dissipate the heat. This is to prevent excessive steam from steaming the eggs around the bowl. The steaming time is flexibly controlled according to the amount of egg tofu. You can use a toothpick to insert it, and the bottom of the egg does not overflow.

Sprinkle shallots and drizzle in red oil before serving, drizzle in light soy sauce or vinegar, it depends on personal preference.
