Steamed Fresh Abalone with Oyster Sauce

Use a knife to remove the abalone meat from the abalone shell; add appropriate amount of salt to the abalone meat and knead it for a while

Then rinse the abalone meat with light salt water; brush the abalone shell and set aside

Put the oyster sauce, light soy sauce, chicken essence and sugar in a small bowl, stir evenly into an oyster sauce sauce; chop 7 small slices of green onion diagonally, and shred ginger

A part of the white onion is cut into thin strips; the green onion leaves are cut into small pieces

Put the abalone meat back into the abalone shell and arrange it on the steaming dish; sprinkle sliced green onion and ginger on the surface, and evenly pour 1 teaspoon of cooking wine

After steaming the steamer, steam on high heat for 5 minutes, turn off the heat and simmer for 2 to 3 minutes; take out the abalone and remove the green onion and ginger

After re-arranging the plate, pour the oyster sauce evenly; put the green onion in the middle, and sprinkle a few chopped green onions on each abalone

Add 2 tablespoons of peanut oil to a small pot and cook until slightly smoked; while it is hot, pour the oil on the green onions and chopped green onions.
