Steamed Nepeta

Fresh nepeta plucked clean

Rinse with water

Put it in the basket to control the surface moisture, try not to have too much water

Mix well with oil after controlling water

Sprinkle some salt

Add flour and cornmeal. Cornmeal is the kind of yellow flour, not cornstarch

Mix it evenly, soak the surface with a thin layer of flour.

Steam in a water basket for 4 minutes

Once it is steamed, it will come out of the pot immediately. Don't stew, otherwise the color will not look good.

Finally, mix a sauce with garlic, vinegar, light soy sauce, chili oil, and sesame oil, and serve with the sauce.
Tips:
Do not steam the nepeta for a long time, nor can it be simmered after it is steamed.
