Steamed Pork Ribs with Lotus Spice Powder

Soak ribs in water to remove blood. In the meantime, prepare scallion and cut into small pieces, ginger and garlic.

Pour in light soy sauce, dark soy sauce, distilled grains (can't be replaced with sugar and a little cooking wine), white pepper, salt, green onion, sliced ginger, and sliced garlic, mix well.

Cover with plastic wrap and refrigerate for more than 30 minutes. (Used to prepare steamed ribs rice noodles)

Put the bay leaves, cinnamon bark, Chinese pepper, chili powder, and five-spice powder into the pot, and slowly fry with the lowest heat until it turns yellow and mature. (The rice and spices should be kept dry, and they must be dried after washing)

Let cool when cooked.

Pick out the spices, use a small rice-washing basket, shake it back and forth to filter out the muddy parts that appear during frying.

After cooling, put it in a sealed bag and crush it with a rolling pin (this step is very laborious, if you have a cooking machine, it is best to use a cooking machine). It does not need to be crushed into powder, it is about the size of millet.
