Steamed Sea Bass
1.
Wash the sea bass (about 700 grams), and shred the green onion and ginger for later use.
2.
Cut a few knives between the fish body and an X-shaped knife at the tail, so that it will be more delicious when marinated)
3.
Sprinkle salt on the fish, pour in the cooking wine, and sprinkle with green onion and ginger.
4.
Sprinkle some dried chilies (if you don't like spicy, you can ignore them).
5.
Pour the light soy sauce.
6.
Put on disposable gloves and grab evenly, put some green onion and ginger into the fish maw, and start to marinate for 20 minutes.
7.
Put the marinated fish into the container.
8.
Put it in a steamer, steam on medium-high heat for 10 minutes, then simmer for two to three minutes.
9.
After the steamed fish, pour out the soup in the vessel and drizzle with steamed fish soy sauce.
10.
Sprinkle with chives.
11.
Heat the oil in another pot. It's almost the same when you see the oil smoke a little bit. Pour the hot oil on the fish and it's done!
