Steamed Shrimp with Golden Silver Garlic Vermicelli
1.
The vermicelli is soaked in water to soften and set aside.
2.
Let's make golden and silver garlic first: cut the garlic into fine particles.
3.
Pour 1 tablespoon of oil into the wok. Heat to 50% heat. Add two-thirds of the minced garlic. Stir continuously with a spatula until the minced garlic turns golden brown.
4.
Wait 3 to cool, pour it into a bowl, and pour it with the remaining raw garlic.
5.
Add a pinch of salt and stir well. The golden and silver garlic is ready.
6.
Let's deal with the shrimp again: Use kitchen scissors to cut off the legs, whiskers, and guns, open the back, and pick out the shrimp threads.
7.
After cleaning, use a knife to gently chop the back of the prawns a few times to make the back of the prawns slightly flat so that the body of the prawns can be kept flat and not deformed during steaming.
8.
Set the plate: Cut the fans into sections and place them on the plate.
9.
Arrange the shrimp again; now you can sit on the steamer.
10.
Use a small spoon to put 5 into the back of the shrimp in turn. After steaming the steamer, put the shrimp on high heat for 5 minutes.
11.
Pour a little light soy sauce with a small spoon, add chives and millet for spicy garnish.

Tips:
Traditionally, hot oil is poured in the last step. In order to reduce fat intake, I omitted this step.
