Stewed Abalone with Bamboo Fungus
1.
The ribs are blanched and washed in cold water, put into a stewing pot, add a piece of bay leaf and appropriate amount of water, and simmer in water (or use a pressure cooker directly, it’s easy)
2.
Cut off the head pedicle of the bamboo fungus in the middle (this is very important to prevent the cooked bamboo fungus from smelling)
3.
Add a spoonful of salt
4.
Soak in light salt water for about 15 minutes
5.
Boil the water, put the bamboo fungus in the hot water for a few seconds
6.
Immediately pick it up and put it in pure water to cool it aside
7.
Remove the viscera of the abalone with a spoonful of salt and repeatedly grab it (this treatment can well remove the fishy smell and the mucus on the surface of the abalone) and then wash it
8.
Pour the stewed rib soup into the pot, add the abalone and cook for 5 minutes
9.
Then put bamboo fungus, salt and chicken essence into a boil
10.
Finally add the green vegetables and mix well
Tips:
Little reminder:
The bamboo fungus and abalone have no taste, so take the flavored rib soup to neutralize the taste, so that the soup is delicious and nutritious. The peculiar smell of sun is to remove the root stalks to remove the fishy smell and the mucus on the surface of the abalone. The trick is to grab and wash with salt.
