Chicken stewed with mushrooms is a traditional and classic delicacy. Of course, the chicken here refers to domestic chickens, which are now commonly referred to as native chickens, stupid chickens, and free-range chickens; most of the mushrooms are authentic wild hazel mushrooms from the Northeast. For the stewed dish today, I chose Hericium erinaceus. The meat of Hericium erinaceus is thick and tender and rich in nutrition. After tasting, it feels that this is a delicious delicacy suitable for all ages.

Stewed Chicken Head Mushroom

1. Main and auxiliary materials: domestic chicken, hericium edodes

2. Wash the chicken chop

3. Put the chicken pieces into a pot with cold water, boil it for 1 minute, and remove the fishy

4. Rinse the chicken nuggets in flying water and set aside

5. Soak and wash the hericium edodes in advance and cut into thick slices

6. Heat oil, add green onion and ginger to fry until fragrant

7. Add chicken nuggets and stir fry

8. After sautéing the aroma, add some light soy sauce

9. Put in Hericium erinaceus

10. Add water to a boil

11. Simmer on low heat for 30 minutes, until the chicken pieces are cooked through

12. Season with salt. Simmer for another 2 minutes to turn off the heat

13. Put it out of the pot and serve on the table

Tips:

1. For all stewed chicken and duck dishes, flying water is the best way to remove the smell of meat.
2. The simmering time is for reference only, the chicken must be simmered until it is soft and delicious.
