Stinky Tofu Boiled Rice Noodles
1.
Put the bought rice noodles in a hot water pot and blanch them to soften the rice noodles. The rice noodles I bought are semi-dried, and blanched rice noodles are softer and more hygienic.
2.
Take out the hot and soft rice noodles in cold water. You can directly soak the rice noodles in water, and then remove them to control the water when they are eaten, but the soaking time should not be too long. Soaking rice noodles for a long time may break easily.
3.
Put a little oil in the casserole, then add fat and lean minced meat and stir fry.
4.
Add some minced ginger and garlic and half a spoon of cooking wine and stir fry to get rid of fishy.
5.
Add a spoonful of hot sauce and a little thirteen incense and stir fry until the red oil is obtained. The hot sauce can be bean paste or Lao Gan Ma, just put it in as you like.
6.
Put in a bowl of bone broth and bring to a boil. If there is no bone broth, you can use water.
7.
After the water is boiled, let the stinky tofu cook for five minutes, and cook until the stinky tofu is ripe and swelled. The stinky tofu at this time is very soft and tender.
8.
At this time, add an appropriate amount of sour pickles and cook for three minutes to bring out the sourness.
9.
Season with appropriate amount of salt.
10.
Add appropriate amount of light soy sauce and chicken essence to taste.
11.
Put rice noodles in a bowl and boil.
12.
Add appropriate amount of leeks before boiling.
Tips:
If you like spicy food, you can add some millet or spicy oil for better taste.
