I remember when I was young, every Chinese New Year, my mother would fry a pot of dried tofu, and then make dried tofu mixed with green onions, which can serve my father and enrich the table.
Deep-fried dried tofu is very strong, chewy, and more storage-resistant, whether it is cold or stir-fried stew, it is very good.

Stir-fried Bean Curd with Vegetables

1. Cut the old tofu into 1 cm thick slices, deep-fry until golden brown on both sides, remove the oil control

2. Wash the small greens, and cut the tofu into cubes

3. Put the small greens in boiling water and blanch for 30 seconds, remove and set aside

4. Cut the scallion ginger and dried chili, stir-fry the scallion ginger and chili shreds in a frying pan

5. Add dried tofu, stir fry, add salt, light soy sauce and stir-fry well

6. Add the small green vegetables and stir-fry evenly, and finally add the chicken essence and stir evenly
