Stir-fried Burdock Shreds

Scrub the burdock and shred it. (The scent of burdock is on the skin. Don't peel off the skin.)

While cutting, soak the burdock in light salt water or vinegar to remove the earthy taste. (Burdock is easy to oxidize, so soak it immediately after cutting it.)

Heat the frying pan, pick up the burdock from the water and put it directly into the pan and fry for about 2-3 minutes.

Add the light soy sauce, dark soy sauce, sugar and salt, stir well, and simmer for 2 minutes.

Simple, crisp, and nutritious. (Sprinkle with ripe sesame seeds to make it more fragrant, I forgot.)
Tips:
1. This dish is not easy to fry for too long, and the taste will not be good if it loses its crispness.
2. Using rock sugar instead of white sugar is more sweet and healthy.
3. You can make more at a time, put it in the refrigerator, and eat it cold for better flavor.
