Stir-fried Chicken with Spicy Sauce
1.
Prepare ingredients: wash chicken, slice ginger, chop garlic into garlic paste
2.
Put 20ML oil in a cast iron pan to heat the oil, sauté the ginger slices, turn the cast iron pan a little while heating the oil, there is a layer of oil at the bottom of the pan, so that the chicken can be put on the bottom of the pan.
3.
Put the whole chicken in a cast iron pan, use medium and low heat to fry the surface of the chicken until it is golden brown. Turn it over during the frying process.
4.
Put in rice wine
5.
Put in light soy sauce
6.
Then add hot sauce and other sauces, stir-fry the sauce and chicken, let the chicken absorb the sauce, then add an appropriate amount of water, cover and simmer for a while
7.
During the braising process, turn it over to prevent sticking to the bottom of the pot and allow the whole chicken to absorb the seasoning. When there is not much soup left, turn off the heat and let the chicken cool before cutting it on the plate.
Tips:
1 rice wine can increase aroma
2 Cut the chicken pieces to look good. Let the chicken cool before cutting it. It is best to cut it down with a single knife. If you are afraid of the chicken hurting, it may make the chicken more tortured.
3 The cast iron pot in the picture has good airtightness, so I can cook the chicken with very little water. This is to tell you how much water you add depends on the firepower of the gas stove and the cooking utensils.
