Stir-fried Crab with Scallion and Ginger

Prepare the ingredients and wash the crabs.

Cut chives into sections and slice ginger.

Uncover the crab shell and cut the crab body into pieces.

Dip a small amount of flour on the cut surface of the crab.

Put oil in the pot, fry the crab pieces until they are 80% cooked, and remove the oil to control.

Pour the remaining oil in the pot, re-heat the oil, and add part of the green onion to deep-fry the green onion oil.

Remove the fried green onion leaves, add ginger slices and sauté.

Pour in the crab pieces and stir fry.

Add a spoonful of light soy sauce and some salt to taste.
