Stir-fried Eggplant with Chopped Pepper
1.
Prepare the ingredients first. The nutritional value of green eggplant and purple eggplant is similar, but the taste of green eggplant is better, no matter which kind of eggplant, the method is the same!
2.
First remove the stalks of the eggplant, wash and slice, sprinkle in salt, mix well, and marinate for ten minutes.
3.
Squeeze the eggplant dry. If it feels too salty, you can wash it again.
4.
Pick up the frying pan, add the eggplant and stir-fry for a while on medium heat. After the eggplant is marinated, it will be cooked very quickly, so you don't need to cook it for too long.
5.
Add chopped pepper and light soy sauce and stir well, sprinkle in chopped green onion and stir well, then serve. Salt is added when marinating the eggplant, and the chopped pepper is also salty, so there is no need to add salt to fry it to avoid excessive saltiness.
