Stir-fried Enoki Mushrooms

Remove the roots of Flammulina velutipes, rinse with light salt water, and control the water;

Shallots, chopped green onions, chopped parsley, and sliced carrots;

Take a small bowl, add chopped green onion and coriander, add all the spices;

Bring water to boil, add enoki mushrooms and blanch for 2 minutes;
5.
Take it out and dry the water with the back of a colander;
6.
Blanch the carrot slices for 1 minute;
7.
Pour all the pre-prepared sauces into the enoki mushrooms and mix well;
8.
Garnish with blanched carrot slices;
9.
A side dish that is simple to make but not easy to taste (if you like it spicy, add a spoonful of chili oil to taste better).
