Dry stir-fried is a cooking method of Sichuan cuisine, the most classic is dry stir-fried kidney beans. Today I made this one without meat. It is vegan and stir-fried kidney beans.

Stir-fried Kidney Beans

1. Pick and wash the beans. After draining, break them into finger-long sections.

2. Heat in a saucepan over medium heat, add dried beans and stir-fry

3. Stir until the color of the beans turns green, add a little base oil to the pot and continue to stir fry

4. Stir-fry until the water is dispersed in the beans and a slight brown spot appears on the skin.

5. Pour a little oil in the pan, add green onion, ginger, minced garlic and Pixian bean paste and stir fry until fragrant

6. Stir fry with beans

7. Add 1 teaspoon sugar

8. Add soy sauce

9. Add 1 teaspoon salt

10. After stirring evenly, turn off the heat

Tips:

If you want to make the fried beans more fragrant, you can stir-fry them with minced meat.
