【stir Fried Kidneys】

Place two bamboo sticks on both sides of the waist flower.

First cut with an oblique knife at 45°, then change the direction of the waist, and cut with a straight knife.

Just change the waist flower to a suitable size.

Cut pork loin with a flower knife, cut large slices of celery, slice ginger and carrots, and cut green onions into sections. The flower knife cutting method is shown above.

Put water in a pot, add Chinese pepper, ginger, cooking wine, boil, put in the pork loin and blanch it to remove the blood and remove the moisture.

Put an appropriate amount of oil in the pot, add the shallots and ginger slices and sauté until fragrant.

Add carrot slices and celery and stir fry for a while, then add the blanched kidneys and stir fry.

Add cooking wine and stir fry for a while.

Add a little light soy sauce, sugar, vinegar, salt, and pepper, stir and stir evenly.
Tips:
1. Adding pepper, ginger, and cooking wine to the kidney flower blanching water can effectively remove the fishy smell of kidney flower.
2. The time for blanching the waist flower should not be too long, otherwise the taste of the waist flower will be too old.
3. Remember to put the light soy sauce at the end. Putting the light soy sauce too early will cause the color to become black.
4. Frying must be done quickly, so that the fried kidneys have a good taste.
