Stir-fried Niuhe

Cut beef into strips, add light soy sauce, dark soy sauce, cooking wine, and sugar.

Pinch off the head and tail of the soybean sprouts, leaving only the middle part, and cut the shallot and garlic sprouts into sections.

The rice noodles should be soaked in warm water one hour in advance, and then boiled until they reach eight maturity. After they are cooked, let them cool and dry, pour in an appropriate amount of edible oil and mix well. Mix the rice noodles with oil to prevent the rice noodles from sticking together.

Heat the pan and pour more cooking oil, and fry the simmered beef until it is ripe.

Heat up another pot, pour the oil, add bean sprouts and sauté.

Add the rice noodles and beef and scatter them with chopsticks, then pour in the light soy sauce, dark soy sauce and salt, and stir-fry until the color is even. Finally, add the garlic sprouts and green onions and stir them out of the pot. Use chopsticks as much as possible when frying the pho. It is easy to scatter and not easy to fry the pho.
