Stir-fried Noodles with Beef, Mushroom and Green Red Pepper

This is actually a piece of veal steak, cut into strips and marinated with some cooking wine.

Wash the shiitake mushrooms, peppers, and green garlic.

Cut the wonton wrappers into suitable size pieces, and be careful to shake them apart.

Boil water in a pot, boil some oil and salt, and blanch the shiitake mushrooms in a minute, then pick up.

The following piece. Note that the dough should be shaken and put down, don't fall all at once, stir it down while stirring it, so that it won't stick to a ball. A little more water too.

After the noodles are cooked to translucent, remove them immediately and rinse them with tap water to prevent sticking.

Pour out the water in the pot, wipe it clean, add a small amount of oil, and stir-fry the chilies first.

Then add the shiitake mushrooms, stir-fry a few times, then serve and set aside.

Pour a little more oil in the pan and fry the beef until its color changes.

Return the peppers and mushrooms to the pot, add a teaspoon of salt, a teaspoon of light soy sauce, and stir-fry evenly. If it is too dry, add a small bowl of boiling water.

The next slice, stir fry evenly. Taste it, if it is not salty enough, add some light soy sauce.

Stir-fry the green garlic until it is dead. If green garlic likes to be cooked slightly, you can fry it in the pan before the noodles.
Tips:
1. Wonton wrapper is thinner than normal noodles, so don't cook it for too long, just pick it up if it's translucent, rinse with tap water, put oil in the water, and more water, so it won't stick easily.
2. The side dishes are up to your liking, and you need a little soup to fry them.
