I have always been in love with the slightly spicy taste and fragrant taste of Hangjiao. When I go to the vegetable market and see it, I will buy a little more and put it in the refrigerator to make various small stir-fry. I bought the bones for the soup, and when I saw too much meat, I cut it off. After sizing, it is served with tofu and hang peppers and stir-fried a bowl of dishes served with rice.

Stir-fried Pork with Hang Pepper

1. Prepare oily tofu and wash the peppers

2. Cut Hang Jiao into slices diagonally

3. Add salt, cooking wine, braised soy sauce and cornstarch to the pork slices and marinate for 1 hour

4. Pour the oil in a hot pan, burst the pork slices under warm oil until all the color changes and pick up

5. Save the bottom oil and stir-fry the peppers until they change color, then serve and set aside

6. Then return the pork slices and oiled tofu to the pot and stir-fry evenly, then add a little boiling water to let the tofu and the pork slices fuse, then pour in the peppers and add the sugar to improve the flavor, then turn off the heat and take it out of the pan.

Tips:

1. This oily tofu is homemade and tastes a little bit salty in the province, and the oily tofu is easy to smell. Try it yourself before adjusting
2. Stir-fried fresh peppers with fresh hang peppers and add them to the end for the best taste
3. White sugar can improve the umami taste. We are used to replacing the essence of chicken with sugar in some dishes, and change it according to the preferences of each family.
4. The braised soy sauce is between dark soy sauce and light soy sauce, you can use a 2:1 soy sauce and dark soy sauce to taste
