Stir-fried Rice Eel with Green Garlic

The rice field eel was kept in clean water for 1 day and spit out the mud and sand.

The cleaned rice field eel is placed on the chopping board and cut into small sections.

Wash the garlic sprouts and cut into small sections, shred the ginger and garlic, prepare a spoonful of bean paste and a little pepper.

Heat the wok, add chilli and pepper in cold oil to fragrant, then add bean paste and shredded ginger and garlic to fry until fragrant.

Add the rice field eel and stir fry until cooked.

Tips:
1. The amount of pepper and chili should be added according to personal taste.
2. Both bean paste and soy sauce contain salt. This dish should be less salted or not salted according to personal taste.
