Stir-fried Sanding

Half a chicken breast.

Pick the scallions and wash, peel off the lotus root and carrots.

Mince the ginger and chop the chives.

Dice carrots and dice chicken. Wash the chicken with clean water first, squeeze out the water, add a little cooking wine, pepper, salt and mix well, add starch and grab it by hand, then pour some oil to seal the water.

Dice lotus root. Boil cold water in boiling water.

Put the oil in a pan, sauté the green onion and ginger, add the diced chicken, and pour the diced carrots after the meat changes color.

After the carrots are broken, pour in the lotus root, stir fry, add a little salt, sugar, and MSG, and put the chives before serving.

Tips:
1. The way to make lotus root is not black is to soak the lotus root in clean water immediately after processing, add a few drops of white vinegar to the water, and add white vinegar to the blanching water.
