Stir-fried Shredded Pork with Enoki Mushroom

Cut off the roots of Flammulina velutipes, wash and control dry water.

Shred carrots and hot peppers and set aside.

Mince garlic.

Cut the shredded pork, add salt, cooking wine, pepper, and starch, and marinate for 10 minutes.

After the water in the pot is boiled, add the enoki mushrooms and scald them to remove them to control the moisture.

Tips:
The enoki mushrooms have been blanched, and the moisture should be controlled to avoid water during frying.
