Stuffed Eggplant with Minced Meat

Cut the eggplant into a flower knife as shown in the picture, without cutting the bottom thoroughly, and change it into sections. Marinate the minced meat with salt and light soy sauce for a while (see the taste of each person to increase or decrease the seasoning).

Tuck the minced meat into the eggplant.

Put it in a steamer and steam it over water.

Chop the green, red pepper, and garlic.

Take out the steamed eggplant with minced meat.

Add cooking oil in a hot pan to sauté the minced garlic.

Add green and red peppers, salt, and stir-fry until soft.

Pour the juice from the steamed eggplant.
9.
Season with light soy sauce.
10.
Pour in the water starch that has been paired with cornstarch, and stir-fry evenly.
11.
Pour it on top of the steamed eggplant.
