Suckling Pigeon with Green Tofu and Bamboo

Soak the yuba with warm water, wash, and cut into sections; soak mung beans in cold water; slice ginger, knotted with green onions; take out the jujube kernels from the red dates for later use.

Clean the pigeon and chop small pieces.

Put it in a casserole and add 1000 ml of cold water.

Bring to a boil and remove the blood foam.

After simmering on low heat for 20 minutes, add ginger and green onions.

Simmer for another 5 minutes, pour in mung beans and simmer for 20 minutes.

Add yuba, salt and pepper; simmer for another 10 minutes.

Add the red dates and adjust the flavor. (I found it out, I changed to a small casserole. I will make a good PP later).
9.
Stew well and remove from heat.
