Sweet and Sour Crispy Crucian Carp

Remove the scales and internal organs of the crucian carp, and remove the black film from the belly of the fish.

Add cooking wine and salt to marinate for 1 hour.

Put more oil in the pot and fry the crucian carp. Before frying, use kitchen paper to soak up the water on the fish, otherwise it will splash.

Fry until golden brown on both sides. Fry the fish thoroughly.

Put the fried fish in an electric pressure cooker, add green onions, ginger, salt, cooking wine, sugar, vinegar, soy sauce, and then add water to 2/3 of the ingredients.

The pressure cooker has a fish-cooking button, and I always choose the porridge button, which makes it worse.

Tips:
Finally, the main purpose of putting it in the casserole is to collect the juice. It is also good to collect the juice directly in the pressure cooker, and it is not easy to paste the pot. But the pressure cooker cannot be placed under the hood, it will make the house full of fish smell.
This amount of sugar can hardly taste sweetness. If you like sweet taste, you can increase the amount of sugar.
