Sweet and Sour Crispy Pickled Radish Sticks
1.
Peel the white radish and red radish respectively;
2.
Then wash the peeled white radish and red radish;
3.
Cut the white radish and red radish into strips respectively; (the thickness of the radish strips is cut according to personal preference, if thicker, the marinating time should be appropriately extended)
4.
Add 50g of salt;
5.
Massage the radish strips with the palm of your hand to make the salt evenly coat each radish strip;
6.
Let stand and marinate for two hours, in order to marinate the moisture in the radish;
7.
After the radish sticks have been marinated for two hours, use a slotted spoon to put the marinated radish sticks into another basin, and save the salted radish in water! (Note: Do not discard the salted radish water!)
8.
Peel the garlic cloves, wash the ginger, and slice and set aside;
9.
Pour the weighed sugar into the basin, and add a bottle (500ml) of white vinegar;
10.
Pour in the cold boiled water prepared in advance;
11.
Then add the sliced garlic and ginger into the seasoning water;
12.
At this time, I used the salted radish water marinated from the radish sticks just now! Pour them into the seasoning water just adjusted;
13.
Add the secret weapon—lemon juice (my bottle is lemon juice for baking, you can also use fresh lemon to squeeze the juice) adding lemon juice can remove the astringency and spiciness of the radish!
14.
After the pickling seasoning is ready, pour it into the radish sticks;
15.
Use a slotted spoon to stir in the radish, so that the seasoning water is evenly coated on each radish strip;
16.
Put the white and red radishes and seasoning juice together into a glass jar that has been cleaned beforehand; (remember: it is best to pickle the radish strips in a glass jar, plastic ones are not good for your health)
17.
Cover the lid of the glass jar, then put it in a cool place, marinate for about 5-7 days, it will be delicious. During this period, you can turn the radish strips twice to prevent the radish strips from not being tasty enough.
18.
