Sweet and Sour Fried Pork

Cut green onions, carrots and ginger into shreds, and cut coriander into sections.

Slice the pork loin, add cooking wine, salt and pepper to taste, then sprinkle in dry starch, and grab it with your hands.

Take another small bowl, mix starch and water into a batter, add it to the meat slices, and grab it with your hands.

Heat oil in the pan, about 60% of the heat, put the meat slices in the oil pan and fry them until they are cooked.

Turn on high heat to 80% heat, add the meat slices and re-fry until golden brown and remove.

Mix the cooking wine, sugar, light soy sauce, white vinegar and chicken bouillon and mix thoroughly to make the sauce.

Leave a little oil in the pot, put the ginger and scallions in the pot, then add the carrots and green onions and stir fry until fragrant.

Finally, add the fried meat slices, add the sauce, stir fry over high heat to collect the sauce.
Tips:
Blending of starch paste-The prepared starch paste is not watery, but viscous, and will not disappear easily when picked up.
