Sweet and Sour Pork

Wash the pork tenderloin and knock it back and forth with a meat hammer or knife to loosen the meat.

Cut the beaten meat into strips.

Put the meat strips into a bowl, add salt, cooking wine, light soy sauce, and chopped green onion.

Grab it with your hands and marinate for more than 15 minutes.

Add egg white and starch, and mix well.

Pour the oil in the hot pan, and fry the tenderloin over low heat when it is 50% hot.

Remove the oil to cool down when it is slightly yellow.

Heat the oil again, add the fried tenderloin to high heat and re-fry for 1 minute.

Immediately remove the oil control.

Add a little oil to the pan.

Add tomato sauce and water, and heat on low heat until bubbling.

Pour in the deep-fried tenderloin and stir quickly, and coat it with the sauce evenly. Turn off the heat, sprinkle chopped green onion, and serve.

3. Use a small fire for the first frying and a big fire for the second time.
