Sweet and Sour Sea Bass
1.
Prepare the ingredients
2.
Wash the fish, make a few slashes on both sides of the fish, add cooking wine, green onion, ginger, pepper, and salt, and evenly spread on the fish. Both sides should be applied to make it easier to taste
3.
Chopped garlic and set aside
4.
Mix starch and flour together, add a little water to make a thick batter
5.
Dip the batter all over the fish (my batter is slightly thinner, but it doesn’t affect the taste)
6.
Pour the oil in a non-stick pan and heat it up. When the oil is hot, put the battered fish in the oil pan and fry until golden on both sides (a little more oil, use a spoon to constantly pour the oil on the fish when frying)
7.
Leave the bottom oil in the pot, saute the minced garlic, add 3 teaspoons of sugar, 2 teaspoons of vinegar, 2 teaspoons of cooking wine, 4 teaspoons of tomato sauce, mix well, then add about 3 grams of salt, 3 grams of chicken essence, seasoning, mix Just pour the good sauce on the fish
8.
Serve and sprinkle with chopped green onion

Tips:
It’s best to use a non-stick pan for frying the fish. Use a little more oil. Don’t turn it too much when frying, so as not to break up the fish. Keep pouring oil on the fish so that the fish will be cooked more easily.
