Sweet and Sour Spare Ribs ~ One Serving of Pork Ribs, One Dish, One Soup

Prepare the ingredients and ask the meat seller to chop it when you buy the ribs. Remember to chop a little longer.

Boil the ribs in boiling water. Wash the blanched ribs again with clean water.

Put an appropriate amount of water in the soup pot and boil, then add the ribs. Simmer on high heat for ten minutes first, then change to medium heat and simmer for twenty minutes.

When braising the ribs, cut the winter melon into chunks and the carrots into hobs. When the ribs are simmered for 30 minutes, add an appropriate amount of salt, add carrots and simmer for 20 minutes, and finally add winter melon and simmer for another 10 minutes. You can turn off the fire.

Take out the ribs from the soup pot and put it in half a spoon of cooking wine (I use the kind of iron spoon used for hot pot).

Continue to add a spoonful of Weijixian soy sauce and two spoonfuls of Zhenjiang vinegar. Stir and marinate for another 20 minutes. It must be marinated, or it won't be tasty enough.

Take out the marinated ribs, put a proper amount of oil in the pot to heat, put the ribs in high heat and fry them until slightly yellow, then remove. (Because the ribs are already cooked, they can be fried on high fire) Then take a bowl and pour out the oil.

Pour the soup of the marinated ribs into the pot, add four spoons of water and two spoons of sugar to a boil in the pot. Cook on high heat until the soup is thick and ready to cook. You can taste the taste before the soup is thick, and add some sweet and sour if it is not flavorful.

Add an appropriate amount of chopped green onion to the winter melon and radish soup. The soup is done~

Tips:
The ribs must be blanched with boiling water to remove the blood, which is more delicious. Soy sauce, cooking wine and Zhenjiang vinegar I use the ratio of 1:0.5:2. If you don't like it too sour, you can put some vinegar in a proper spoon.
