Sweet and Sour Yellow Croaker

Prepare the materials.

Slice the garlic.

Wash the yellow croaker well and make a few cuts on both sides with a knife to make it easier to taste.

Pour a little oil in the wok, heat it up, add ginger and garlic and saute until fragrant.

Add yellow croaker, fry for 30 seconds, turn over and fry for another 30 seconds.

Pour in a little cooking wine and mix gently with a spatula.

Pour in a bowl of water, close the lid, and bring to a boil over high heat and turn to low heat.

When the yellow croaker is cooked, pour in the dark soy sauce.

Pour in fresh soy sauce.

Then pour in the vinegar.

Add an appropriate amount of salt and mix well.

Finally, add white sugar and mix gently.

Turn off the heat when the soup is dry.

Serve out and sprinkle with chopped green onion.
Tips:
This is for children, so it doesn't fry thoroughly. For adults, you can add more oil to fry the yellow croaker until it is crispy on both sides, and the taste will be richer.
White sugar can be added at the end, because the soup will dry up quickly with the addition of white sugar, and I personally feel that it is not very tasty.
