Taiwanese Hand Cake

Mix flour with appropriate amount of salt and pepper

Slowly pour in hot water at about 80 degrees and stir into slices with chopsticks

Make a smooth dough with moderate hardness by hand, cover with plastic wrap and let it rest for 30 minutes

Put the chopped green onion in a small bowl, mix well with salt, pepper and a tablespoon of sesame oil to marinate

Divide the dough into 6 equal parts (depending on the size of the pot)

Knead the dough for a while, then roll it out into a large thin piece. The thinner the better. Spread the marinated green onion evenly on the dough. Use a knife to make thin strips on the dough, leaving 1 cm at each end. Don't cut it.

Roll up from one end to grow into a strip

Roll it all up into a dough

Roll out the dough thinly with a rolling pin

Heat the pan and put the oil in, put the cakes in and fry over a medium-to-low heat

Fry one side and turn it over until golden brown on both sides

The fried pancakes can be eaten directly or with vegetables, eggs and meat.
