Taiwanese Hometown Flavor-braised Pork Rice

Wash 500g of rice, put the washed rice in a Philips rice cooker, add 500g of water, choose northeast rice, fragrant glutinous taste, and start cooking.

Dice the pork belly, shred the onion, and dice the mushrooms. Heat up the pan, add the pork belly and stir-fry until the oil comes out. After the pork is browned, remove it for use.

When the lard from the fried pork belly is heated to 60%, add the shredded onion and shiitake mushrooms, and fry until golden brown, remove the oil control and set aside.

In another hot pot, stir-fry with rock sugar until it melts, add diced pork belly, stir fry for color, pour in soy sauce, fried onion and shiitake mushrooms, stir-fry evenly, pour in boiling water, star anise, licorice and pepper.

In another cast iron pot, pour the marinated pork and simmer for 2 hours.
