Three-color Chicken

Prepare chicken, soaked mushrooms and chives.

Prepare edamame.
3.
Dice chicken and set aside.

Add salt, peanut oil, cooking wine, and soy sauce to the diced chicken and marinate for 10 minutes.

Dice the mushrooms and cut the chives into sections for later use.
6.
Blanch the edamame in boiling water, remove and drain.

Heat the pan with oil, add the chicken and stir fry until the color changes.

The fried chicken is served.

In another pot, sauté the scallions.

Add shiitake mushrooms and stir fry.

Add edamame and stir fry.

Add a small amount of water and cook for a while.

Cover and simmer for one minute.

Stir-fry the water and add some salt and soy sauce to taste.
15.
Add the fried chicken and stir fry a little.
16.
Slightly thicken with wet starch to get out of the pan.
Tips:
Don't cook the chicken for too long, so as not to harden and affect the taste.
