The "dry mix" cooking method is widely used in Sichuan cuisine. Because it has a spicy and dry aroma and a long aftertaste, it is the best delicacy for loss of appetite in summer.

Tofu with Golden Needle

1. Prepare materials. Cut coriander and green onion into sections, red millet pepper and green thread pepper into small circles, shred cucumber, and shredded tofu skin.

2. Boil water in a pot, and quickly blanch the enoki mushrooms until they become slightly soft. Remove and squeeze the water.

3. Blanch the tofu skin until it is broken and there is no beany smell, remove and control the moisture.

4. Put the tofu skin and enoki mushrooms in a bowl.

5. Add salt, chicken powder, Chinese pepper powder, dried chili powder, and chopped peanuts and mix well.

6. Add coriander, shallots, cucumber shreds, chili rings, sesame oil, and mix well. Garnish with white sesame seeds.

Tips:

1. Don't eat spicy food, you can reduce the amount of chili powder.
