Tomato Crispy Pork
1.
Cut the pork into slices, marinate in appropriate amount of soy sauce, black pepper, salt, sugar, and cooking wine for at least 10 minutes.
2.
Chop tomatoes and set aside.
3.
Add appropriate amount of salt, crushed black pepper, sugar, baking powder to the flour, mix it with water, and pick it up with chopsticks to have a consistency that can drip. 50g flour is mixed with about 1/8 teaspoon of baking powder, 1/4 teaspoon of baking powder = 1g, just use a handful of it with your fingers, it doesn’t matter if it is less, it will cause bitterness if it is too much.
4.
Heat the oil, coat the meat slices with flour paste, fry for a while, pick up, and fry again until golden.
5.
Leave a little oil in the fried meat, fry the tomatoes until they are almost like sauce, add a small amount of water, and season appropriately.
6.
Pour the crispy pork and stir fry a few times before serving.
Tips:
1. Stopping at step 6 without tomato is also a delicious crispy pork
2. Baking powder must be added to the fried powder to make it crispy. You can also add a little egg
3. After the tomato is fried, add the crispy pork and stir-fry for a while to maintain the crispness of the crispy pork
