Tomato Sirloin
1.
Wash the whole sirloin with blood water, boil water in a pot, put the sirloin in the blanching water after the water is boiled, to remove the blood foam
2.
Rinse the sirloin in cold water, cut into small pieces, and drain the water for later use.
3.
Slice ginger and garlic in an appropriate amount, wash and set aside. Chop some chopped green onions and use them when they are out of the pan.
4.
Put 3 tomatoes in boiling water and blanch them, peel and cut into pieces (2 cut into smaller pieces, 1 into larger pieces), and set aside.
5.
Heat up the pot and add a proper amount of oil, not too much. The sirloin itself is also a bit oily. Add a little more salt to lock the meat nutrition and prevent sticking to the pan. Add the sirloin and stir-fry when the oil is hot.
6.
When the flesh color becomes slightly golden and the aroma is overflowing, add the sliced ginger and garlic and continue to stir fry.
7.
After the ginger and garlic are fragrant, add the cooking wine, light soy sauce, and continue to fry for about 2 minutes.
8.
Add boiling water to the pot, and the amount of water needs to flow over the food in the pot. Turn to low heat and simmer slowly. Adding a teaspoon of vinegar during the slow stewing process will not affect the taste, but also help the body to absorb the nutrients of the meat. Then add the tomatoes that are cut into small pieces, and save the large pieces of tomato until the end.
9.
Continue to simmer slowly, about 1 hour. The stewing time is longer, so I transfer the ingredients to a small pot and stew. Be careful not to boil it dry during the process. If the soup is not enough, you can add boiling water and continue to stew without affecting the taste and nutrition. After the meat is crispy, add a large piece of tomato and continue to simmer for 8 minutes.
10.
Finally, add a little salt, according to personal taste, because the salt has been put in the front, and the seasoning also has a salty taste, I only put a little bit, and it is not good to put too much. Sprinkle in the chopped green onion to serve.
Tips:
My wife is in confinement, and her nutritional needs can keep up with her, and she has to have an appetite. The tomato sirloin is delicious and the soup is rich and sour. My wife always only ate a bowl, soaking some soup and adding another bowl of rice.
