#trust之美# Fried Eggs with Chives and Poached Buns
1.
Ingredients: flour, eggs, leeks (yeast powder forgot to shoot).
2.
Mix the yeast powder with water and slowly pour it into the flour to form a soft dough, put it in a basin and cover with plastic wrap to wake up for 30 minutes.
3.
Chop the leeks into fine pieces.
4.
Beat the eggs and fry them, then chop them into pieces.
5.
Add edible oil, light soy sauce, dark soy sauce, steamed bun seasoning powder, and chopped eggs to the leeks and mix well.
6.
Add sesame oil and salt, stir well and set aside.
7.
After the dough wakes up, move it to the panel, knead it into a long shape, and cut it into small doughs of equal size.
8.
Roll the small dough into a round dough piece with a thickness in the middle and thin around the edges.
9.
Add the right amount of chives and egg filling.
10.
Wrap all the dough like a bun, and wake up for a few minutes.
11.
After the pan is hot, pour a little oil, put the small buns in the pan, and fry them over medium heat.
12.
When the bottom of the steamed bun is golden brown, add water to one-third of the steamed steamed bun. Cover the pot and fry on high heat. Shake the pot in the middle to prevent the steamed bun from sticking to the bottom of the pot. The water in the pot evaporates slowly, and the small buns expand slowly. Because they are stuffed with chives and eggs, they mature in 8 minutes.
13.
Finished product.
Tips:
1. The absorbency of flour is different, please add the amount of water according to the characteristics of your own flour.
2. If the leeks have a lot of water, you can add a little vermicelli to absorb water, so that the leek stuffing will not produce too much water.
3. The fried buns should be made smaller and easy to cook.
4. After adding water, shake the pot to prevent the bottom of the bun from sticking to the pot.
5. When the moisture is about to evaporate, be optimistic and turn off the fire appropriately to avoid sticking the pot.
