Soak the meat mushrooms in water for 30 minutes, scrub repeatedly to remove the mud and sand, and soak in fresh water. The water that has been soaked in the meat mushrooms is reddish brown and can be kept for later use.

Scoop out the mushrooms, remove the hard roots and set aside

Stir-fry the mushrooms, add light soy sauce, cooking wine, and boiling water until the ingredients are gone. After simmering on medium heat for about half an hour, the chicken is relatively rotten. Add carrots and continue cooking for about 10-15 minutes

Tips:
You have to wait until the chicken is almost simmered before adding carrots. I added it a bit early in the picture.
