Vegetarian Fried Cat Ears

1. Wash a large pitaya peel, cut it into small pieces, pour it into a blender, add an appropriate amount of water (a very small amount), stir it into a puree, and set aside.

2. Use 400 grams of noodles and 280 grams of pitaya puree to mix the noodles, cover with plastic wrap or a lid, and let stand for about 20 minutes.

3. Divide it into two pieces and roll them into 8mm thick discs.

4. Cut the round dough into 8 mm squares horizontally and vertically.

5. Sprinkle some dry flour on the sushi curtain, rub the small squares diagonally, as shown in the picture, the cat’s ears are done.

6. Wash the vegetables and cut into small pieces for later use.

7. Put water in the pot, add appropriate amount of salt and oil to the water, boil, put in the cat’s ears, cook, and remove. It can be overcooled or overrun.

8. Put oil in the pot, fry the chopped green onion, add vegetables, add appropriate amount of salt and oyster sauce, when it is almost cooked, pour into the cat’s ears and fry until cooked.

9. Pour sesame oil before serving, and serve.

10. Finished product.

Tips:

Pitaya is best to use red-hearted pitaya, I didn’t buy it, and used the pitaya peel. If you do too much, you can put it in the refrigerator. When frying, you can add any meat and vegetables you like, and cat’s ears can also be used as soup.
