Vegetarian Fried Potato Shreds

Peel, wash and shred, soak in cold water to remove starch.

Drain.

Pour oil in the pan, add potato shreds, stir fry a few times quickly, add salt, pepper, dried chili shells and vinegar and fry for about 3 minutes until the potatoes are cooked through, then add light soy sauce and stir well.
