Weird Fried Rice (salty and Sweet)
1.
Dice onion and carrot; wash lettuce and cut into thick strips.
2.
Prepare 15ml light soy sauce + 7.5ml braised soy sauce + 2.5ml mirin + 20ml water.
3.
Pour a little vegetable oil in the pot (can be adjusted according to your own taste, I like fried rice with less oil), add diced onions and carrots, stir-fry for 2 minutes on high heat, then turn to medium heat for 3 minutes.
4.
When the onions are translucent and the diced carrots are soft, add the rice. If the rice is lumpy, poke the rice over medium heat, then turn to high heat and stir fry.
At this time, there should be water vapor left by vegetables in the pot. When the water vapor is reduced, pour in the adjusted sauce and lettuce, and continue to stir-fry evenly over high heat.
5.
When the lettuce leaves shrink, turn to medium heat, add raw eggs, and then quickly stir (the spirit of bibimbap) to coat the rice with egg flavor. Add salt or other auxiliary materials according to your taste.
As the eggs bring in a lot of water, it feels evenly coated, then turn to high heat and stir to let the moisture evaporate.
Believe me, the fried rice with fried eggs and wrapped eggs tastes very different~
Tips:
1. I made a low-oil version, so the finished product looks like "stewed rice" with the name of fried rice
2. This dish is actually a combination of soy sauce fried rice + sweetness, and there are other sauces. The fried rice is very fragrant. I recommend one here (the taste is confirmed by three people): Lee Kum Kee Sichuan Dandan Noodle Sauce, which can be fried The taste of shrimp paste/seafood! Usage: After the pan is hot, add oil and sauce to make the sauce blend with the oil perfectly. The following steps are the same as this strange fried rice. It tastes really good~
3. I like to eat sweet, so put the onion in the pot early and fry until it becomes soft and sweet. If you like the spicy raw taste of onions, add it after the carrots.
