Wonton with Scallion Oil

Mix minced meat. Add appropriate amount of salt, appropriate amount of rice wine, 1 tablespoon of dark soy sauce, 2 tablespoons of light soy sauce, and appropriate amount of ginger powder and mix well. Add clean water in batches, stir in the same direction, each time the water is completely absorbed and add another time, and whipped up until the gum is formed. Add 2 tablespoons of cooked salad oil, chopped green onion and stir well.

Wash the vegetables and drain the water.

Bring water to a boil in a pot, add green vegetables and blanch. Blanch until the vegetables become wilted.

Remove the cold water to cool, and squeeze out the water.

Chop the greens and pour into the pork filling, stir evenly to become the wonton filling.

Prepare wonton wrappers and water.

Take a piece of wonton wrapper, spread water around it, and put the filling in the middle.

Fold the wonton wrapper in half into a rectangle and pinch the three sides tightly.

Fold in half again.

Spread clean water on the inner corners and pinch to form a raw wonton embryo.

Do everything well.

Bring the water in the pot to a boil, put it in the steaming rack, and place the raw wonton embryos on the steaming rack with a distance. Bring water to a boil and steam on medium heat for 5 minutes.

Put an appropriate amount of scallion in a bowl, heat the salad oil to 60% and pour into it to make scallion oil.

1 tablespoon of light soy sauce, appropriate amount of chili oil, a few drops of sesame oil, 1 tablespoon of vinegar, and appropriate amount of sugar to make a flavored juice.

Put the steamed wontons on the plate and let cool. Add the sauce and scallion oil and mix well.
Tips:
1. Prepare the meat filling and add water, whipped up the strength, the taste is not dry, add cooked oil, the taste is more smooth and tender.
2. Add flavor sauce to the wontons, and don't add too much salt to the wonton fillings, so as not to be too salty.
3. Pinch the wonton and wipe it with water to make the adhesion stronger.
4. Just steam the wontons. If the time is too long, the vegetables will turn yellow.
5. The sauce is prepared according to your own taste.
