Xiaobawang Boiled Baked Cold Noodles
1.
Preparation: Wash and chop coriander, slice ham
2.
Sauce: Original Daxi Da Barbecue Sauce, Lee Kum Kee Tomato Sauce. Chili oil (ratio 3:2:1)
These brands are delicious to me. You can make the chili oil according to your taste. It contains cumin, sesame oil, and small dried chili.
3.
Beat the eggs (the color is because I added a small amount of salt. Adding salt will spread the eggs more evenly)
4.
White vinegar and water (preferably pure water, ratio 3:1)
5.
Heat the pan with oil, add the cold noodles when the oil is hot, and then spread the egg liquid on the cold noodles. (In this step, use a small fire or a gentle fire)
6.
After the egg has solidified a little, put another piece of cold noodles on it and press it, but don’t press it out.
7.
(Switch to medium heat) Use a spatula to open a corner of the cold noodles and put them in the vinegar. (After putting the vinegar, the cold noodles will not be too hard). Turn over the cold noodles and add vinegar
8.
After 1~2 minutes (slow or turn off the heat), add sesame seeds on one side of the cold noodles. (Sautéed white sesame) sliced ham
9.
Add the prepared sauce, coriander
10.
Roll up from the side with the material to the side without the material and add the vinegar
11.
Cut into pieces, put on a plate
