Yuba Mixed with Spinach

Break a few sections of dried yuba, soak for several hours, soak thoroughly.

Soak the yuba and cut diagonally into sections, wash and cut spinach into sections. Mince ginger.

Boil the spinach and yuba with hot water, and set aside.

Put the spinach and yuba in a large bowl, add the seasoning in the ingredient list, and mix well.
5.
Finished product.
Tips:
The yuba soaks for a longer time and soaks thoroughly. Blanch the spinach to remove the oxalic acid. The blanching time should be short to maintain the texture.
