Yunnan Specialty Snacks (youtiao with Pea Flour)

This is the finished pea flour bought in the supermarket.

Chop ginger and add water to make ginger water and parsley.

I use 5 teaspoons.

Mix the pea flour into a paste with cold water.

Put water and salt in a saucepan and bring the water to a boil.

Turn off the heat to a minimum and pour in the pea flour.

Be sure to stir slowly in one direction with low heat until the scent of peas is ready. This process takes about five minutes.

Pour the prepared pea flour into a bowl, add ginger water, coriander, sesame sesame oil, and chili powder.
9.
The cooked pea flour is paired with fresh fried dough sticks. This is the specialty snack of our Yunnan. (Cut the fried dough sticks into small pieces, put them in a bowl and eat them)
