Yuxiang Pork

The ingredients are basically cut into shreds.

Soak the fungus, and boil it in boiling water after soaking. If the fungus is slightly larger, tear it into small pieces.

Add starch and a small amount of water to the shredded pork and stir well.

Heat oil in a pan, add star anise and angelica dahurica and stir fry until fragrant.

Add the shredded pork and stir fry with chopsticks.

When the shredded pork is pink, add pepper, minced garlic and dried chili and saute until fragrant.

Add the carrot shreds and stir fry for two seconds.

Add shredded green pepper and stir fry quickly for two seconds.

Add fungus and stir fry.

Add the spring onions and stir fry.

Add the sauce prepared with the above remaining seasonings, stir fry for the taste, and collect the juice.

Tips:
The shredded pork must be evenly grasped with starch, otherwise the meat will be dry and hard.
Put the oil in the pot twice as much as usual. The shredded pork should be stir-fried quickly after being put into the pan. Don’t wait for the shredded pork to be fully cooked before adding other auxiliary materials. When the shredded meat is pink, about six mature, add the remaining auxiliary materials. Stir-fry, every next auxiliary material should be quickly stir-fried, too long time will easily affect the taste!
The sauce can be adjusted at will according to personal taste.
