Yuxiang Pumpkin

Prepare the ingredients. Cut the pumpkin into pieces and cut off tenderly, mince green onion, mince ginger, mince garlic, and mince chili.

The pumpkin is fried in a pot at 120 degrees.

The pumpkin is deep-fried in oil.

Do not leave too much oil in the pot, then add minced garlic, minced ginger, and minced chili over low heat and saute.

After sauteing, add salted fish and pumpkin and stir-fry evenly over medium heat.

Add seasonings, soy sauce, white vinegar, cooking wine.

Add a little water and stir fry evenly.

Add a pinch of salt and two spoons of sugar and stir-fry.

Some more thin cornstarch water to thicken.

Finally, sprinkle with chopped green onion to make a pot. It takes about 2~3 minutes from adding the pumpkin to the pot.

Pumpkins should be old ones, so they won’t fall apart and taste good.
